Guilt-Free Garlic Parmesan Zucchini Noodles Pasta Recipe

Makes 4 Servings

YOU WILL NEED

  • 4 medium zucchini (about 2 pounds)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon minced garlic (3 to 4 cloves)
  • 1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
  • 2 medium tomatoes, chopped, see note (about 12 ounces)
  • 1/2 cup shredded parmesan cheese, plus more for serving
  • 1 cup basil leaves, torn into pieces
  • 1 teaspoon cornstarch
  • 2 teaspoons cold water
  • Salt, to taste


DIRECTIONS
PREPARE NOODLES

  1. Trim and spiralize the zucchini (see notes below for how to do this without a spiralizer). Cut extra long noodles so that they are about the length of spaghetti.
  2. Add olive oil, garlic, and the red pepper flakes to a large, deep skillet. Turn to medium heat. When the oil begins to bubble around the garlic, add the zucchini noodles. Toss the noodles with pasta tongs and cook until al dente — they should be wilted, but still have a crunch; 5 to 7 minutes. Do not let the noodles cook any longer or else they will become mushy. As they cook, keep tossing so that all the zucchini noodles have a chance to hit the bottom of the skillet.
  3. Stir in the tomatoes, basil, and parmesan cheese. Cook for one minute.
  4. Use pasta tongs to transfer the noodles, tomatoes, and basil to a serving dish. Leave the liquid in the skillet.

TO FINISH

  1. Bring the liquid to a simmer. Combine cornstarch and cold water in a small bowl then whisk into the simmering liquid. Cook, while whisking, until the liquid thickens to a sauce; about 1 minute. Taste the sauce and season with salt.
  2. Pour the sauce over the zucchini, tomatoes, and basil. Finish with more parmesan cheese on top and serve immediately.

GARLIC KNOT CHICKEN PARMESAN SANDWICHES

INGREDIENTS

  • 1 pound refrigerated pizza dough, sat at room temperature for 30 minutes
  • 1/2 cup olive oil, divided
  • 2 large boneless skinless chicken breasts, cut in half crosswise to create a total of 4 thin chicken slices
  • Kosher salt and black pepper
  • 2 eggs
  • 2 tablespoons milk
  • 1/2 cup flour
  • 3 cups seasoned Italian breadcrumbs
  • 1 cup vegetable oil
  • 1/2 cup marinara sauce, plus more to serve
  • 6 slices mozzarella cheese
  • 1/2 cup grated parmesan cheese, divided
  • 8 cloves of garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons chopped fresh parsley


INSTRUCTIONS

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper. Set aside.
  2. On a smooth surface, cut the pizza dough into 3 equal-sized pieces. If your dough is sticking too much to the rolling surface, very lightly sprinkle the surface with flour. Roll the dough into long, even ropes, about 1.5 to 2 feet long. Tie each rope in a figure-8 knot and transfer to the prepared baking sheet, gently pulling at the ends to create a longer, thinner knot. Brush with olive oil and cover with plastic wrap for 20 minutes.
  3. Bake until cooked through and just beginning to turn golden on top, about 22-25 minutes. Set aside to cool.
  4. Meanwhile, prepare the chicken. Season the chicken slices with salt and pepper. In a small bowl, whisk together the eggs and milk. Pour the flour and breadcrumbs into two additional, separate bowls. Dip the chicken pieces, one at a time, into the flour, then the eggs, then the breadcrumbs, patting and turning to adhere. Then, set the chicken aside on a large plate. Continue until all of the chicken has been breaded.
  5. Heat the vegetable oil in a skillet over medium-high heat. Once hot, add the chicken in batches and cook until the chicken is browned and cooked through, about 3-4 minutes per side. Transfer the chicken to a paper towel lined plate to absorb excess oil.
  6. Carefully slice the baked bread knots in half, crosswise. Working spoon marinara sauce on the bottom of each bread knot half. Then, place a chicken cutlet on top. You will have one extra chicken cutlet, which you can use to double-up a sandwich or you can save for leftovers. Top the chicken cutlets with additional marinara. Place two slices of mozzarella cheese on each sandwich, and then sprinkle with parmesan cheese. Cover with the top bread knot halves and transfer back to the oven until warmed through and the cheese has melted, about 5 minutes.
  7. While the sandwiches bake, make the garlic oil. In a small, microwave safe bowl, combine the garlic, remaining olive oil, and butter. Cover loosely and microwave for 30 seconds. Stir, cover, and microwave again for 15 seconds, or until melted. Mix in the chopped parsley.
  8. Brush the sandwiches generously with the garlic oil mixture, making sure to scoop the garlic pieces with the pastry brush and dab them on the knots. Serve warm with additional marinara.

Ingredients

  • 1 1/2 pounds baby red potatoes peeled and halved
  • 1/2 cup finely grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. Add halved potatoes and olive oil to a ziploc bag and toss.
  2. Add parmesan cheese, paprika, garlic powder, thyme, salt, and pepper to the bag and toss again until well mixed.
  3. Place the potatoes cut side down in a single layer on a silicone baking mat or other nonstick surface such as parchment paper.
  4. Bake at 450 F until browned, about 25 minutes.

INGREDIENTS
1 pound ground chicken breast
3/4 cup Italian breadcrumbs
1 cup fresh grated Parmesan cheese
3 garlic cloves, pressed
1/2 small onion, grated
2 tablespoons + 1 cup marinara sauce (divided)
1/2 tablespoon dried Italian seasoning
2 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, chopped
1/2 teaspoon kosher salt
1/2 teaspoon fresh cracked black pepper
1 large egg, lightly beaten
1 cup shredded Italian blend shredded cheese

INSTRUCTIONS
Preheat oven to 350°F. Prepare a baking sheet by lining with parchment paper.
Set aside 1 cup marinara and shredded Italian cheese.
In a large mixing bowl, combine all remaining ingredients. Mix well, do not over mix or you will have tough meatballs. Using a 1 tablespoon scoop, portion out meat mixture and place on baking sheet. After all meatballs have been scooped onto tray, roll into balls. TIP: If you lightly wet your hands the meatballs will form better and crack less. Bake for 16-18 minutes until lightly browned.
Turn oven to broil.
Drizzle a spoonful of marinara over each meatball. Sprinkle with shredded cheese.
Broil for 2-3 minutes until cheese is golden brown and bubbly.
Serve and enjoy!

INGREDIENTS

  • 2 Tablespoons olive oil, divided
  • 4 chicken breasts*
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese
  • 1 teaspoon McCormick Italian Seasoning Herb Grinder, plus more for garnish
  • salt and pepper to taste
  • ½ cup shredded parmesan cheese


INSTRUCTIONS

  1. In a large skillet add 1 Tablespoon olive oil and salt and pepper the chicken. Cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
  2. Add 1 Tablespoon olive oil to the skillet and add the onion and garlic. Sauté for a couple of minutes until tender. Add the tomato sauce, heavy cream, parmesan cheese, and italian seasoning. Salt and pepper to taste.
  3. Bring to a simmer and add the chicken back to the skillet. Top with shredded parmesan cheese. Serve over pasta of desired.


NOTES
*I like using thin chicken breasts so they cook quickly and evenly.
