Seared Scallops in a Cajun Mustard Cream Sauce

ingredients

  • 1 pound sea scallops (about 1 inch thick)
  • 2 teaspoons cajun seasoning
  • 1/2 tablespoon butter
  • 1/2 tablespoon oil
  • 1 clove garlic, chopped
  • 1/2 cup heavy/whipping cream
  • 1 tablespoon dijon mustard
  • 2 teaspoons cajun mustard (or grainy mustard)
  • 1 tablespoon lemon juice
  • salt and pepper to taste
  • 1 tablespoon parsley, chopped


directions

  1. Pat the scallops dry and press on the cajun seasoning.
  2. Met the butter into the oil in a pan over medium-high heat, add the scallops and sear until lightly golden brown, about 1-2 minutes per side, before setting aside.
  3. Add the garlic and cook until fragrant, about a minute.
  4. Add the heavy cream, mustards and lemon juice, bring to a boil, reduce the heat and simmer until the sauce thickens a bit, about 2-3 minutes.
  5. Season the sauce with salt and pepper to taste and serve the scallops in the sauce garnished with the chopped parsley.

Pan Seared Scallops with Bacon Cream Sauce



Yield: 2 servings

Total Time:30 minutes

Ingredients:

  • 6 slices bacon, chopped
  • 1/2 Tbsp butter
  • 1 cup heavy cream
  • 1/2 cup Parmesan, freshly grated
  • 1/2 tsp olive oil
  • 6 large scallops
  • Salt & pepper
  • Chopped chives for garnish


Directions:

  1. In a medium skillet, cook chopped bacon over medium-high heat until crisp. Remove the bacon with a slotted spoon to a paper towel-lined plate to drain.
  2. Add butter, cream, and Parmesan to the skillet with the bacon grease. Reduce the sauce over medium heat by half. Stir in the cooked bacon. Season with salt and pepper to taste. Keep warm over low heat.
  3. In a separate skillet, heat 1/2 tsp olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is hot (make sure it's really hot!), add the scallops to the pan. Sear until golden brown on one side, approximately 1 minute, and turn over. Sear on the other side for 1 minute until golden brown. Remove to a paper towel-lined plate to drain.
  4. Serve the scallops over a layer of bacon cream sauce. Garnish with chives.
