BEST SHRIMP PAD THAI RECIPE

INGREDIENTS

  • 100 g (3.5 oz) Pad Thai rice noodles (flat rice stick noodles 3-5 mm wide)
  • 2 tablespoons fish sauce
  • 2 tablespoons tamarind puree
  • 2 tablespoons palm sugar (or brown sugar)
  • 1 tablespoon oyster sauce
  • ¼ teaspoon ground chili powder
  • 3 tablespoons cooking oil
  • 2 garlic cloves, minced
  • 1 tablespoon chopped shallot
  • 100 g (3.5 oz) peeled, deveined large shrimp (or sliced chicken)
  • 60 g (2.1 oz) firm tofu, cut into thin sticks
  • 2 eggs
  • 1 cup (60 g / 2.1 oz) bean sprouts
  • 2 tablespoons garlic chives cut into 1-inch pieces
  • Condiments: finely chopped peanuts, lime, ground chili, sugar


INSTRUCTIONS

  1. Soak the rice stick noodles for at least ½ hour in hot tap water (or according to directions).
  2. In a small bowl stir together fish sauce, tamarind puree, palm sugar, oyster sauce and chili to make the Pad Thai sauce.
  3. Heat the oil in a wok or large frying pan on medium heat. Add the garlic and shallot and fry until fragrant. Add the shrimp and tofu and stir fry until the shrimp are cooked. Push to the cool edge of the wok/pan or remove.
  4. Crack the eggs into the pan, let set for a moment before stir frying until they look scrambled. Push the eggs to the cool edge as well, or remove from pan.
  5. Add the drained rice noodles to the pan and pour the prepared Pad Thai sauce over top. Cook for a few minutes and toss gently until the noodles have softened (I usually try one just to make sure it's not too chewy anymore). Stir in the shrimp mixture and scrambled egg.
  6. Toss in the bean sprouts and garlic chives then remove from heat.
  7. Serve Pad Thai with chopped peanuts, a key lime half, ground chili, sugar, extra bean sprouts and garlic chive ends.

Ingredients

  • 18 small to medium sized shrimp
  • 1/2 teaspoon chili powder
  • 2 teaspoons olive oil
  • 3/4 cup guacamole store bought or homemade
  • 18 Lay's Classic potato chips
  • Optional garnish: chopped cilantro


Instructions

  1. Heat the olive oil in a large pan over high heat. Sprinkle the chili powder over the shrimp.
  2. Place the shrimp in the pan and cook, stirring occasionally, for 2-3 minutes or until shrimp are pink and opaque,
  3. Place 18 potato chips on a platter. Spoon approximately 2 teaspoons of guacamole onto each one and place a shrimp on top of each chip.
  4. Serve, garnished with cilantro if desired.

SHRIMP AND CRAB NACHOS



Yield: about 30 nachos

INGREDIENTS:

  • 1 tsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp (1 clove) minced garlic
  • 1/2 pound salad shrimp, uncooked and peeled
  • 1/2 pound cooked lump crab meat
  • 2 oz cream cheese
  • 1/4 cup sour cream
  • 1 tbsp finely chopped green onions
  • 1/2 tsp old bay seasoning
  • salt and pepper, as needed
  • 1 cup shredded cheddar cheese
  • 2 cup grated pepper jack cheese
  • tortillas
  • jalapeños


DIRECTIONS:
1. Heat the olive oil in a large non stick skillet over medium heat. Add the cumin, garlic and shrimp and cook until the shrimp are pink.
2. Drain the juices from the shrimp, then combine the shrimp, crab meat, cream cheese, sour cream, green onions and old bay seasoning in a large bowl. Add salt and pepper to taste.
3. Combine cheddar and jack cheeses.
4. Spread tortilla chips out on a baking sheet lined with a silicone baking mat or parchment paper.
5. Spoon the shrimp and crab mixture onto each chip, then cover each chip with cheese and top with a jalapeño.
6. Broil at 350 for 8-10 minutes, or until the cheese is melted.

Grilled Bang Bang Shrimp Skewers

INGREDIENTS

  • 1 pound raw shrimp thawed, devieined
  • 1 tablespoon canola or vegetable oil
  • 1/3 cup mayo
  • 3 tablespoons sweet chili sauce
  • 2 teaspoons sriracha
  • diced scallions for garnish
  • 10 medium wooden skewers


INSTRUCTIONS

  1. Soak medium wooden skewers in water for 30 minutes before adding shrimp. Remove from water and dry on a paper towel. Preheat grill to high.
  2. Prepare sauce by whisking mayo, sweet chili sauce, and sriracha together. Set aside.
  3. Place shrimp on skewers until you have an inch on either end (mine fit about 3 shrimp per skewer). Brush shrimp with oil on both sides to keep from sticking to grill. Place on preheated grill and cook for 2-3 minutes per side, or until bright pink. Remove from grill.
  4. Brush each skewer of shrimp with bang bang sauce. Make sure to get both sides! Serve shrimp immediately, with extra sauce on the side.

Ingredients

  • 2 cups 2% milk
  • 4 ounces cream cheese
  • 2 Tbs flour
  • 1/2 tsp salt
  • 3 Tbs butter
  • 3 Tbs minced garlic
  • 1 lb peeled and deveined shrimp
  • 1 cup grated Mozzarella cheese or 3 cheese blend
  • 1/3 cup parmesan cheese (optional)
  • Pepper to taste
  • Parsley to garnish


Instructions

  1. Using a hand mixer or blender, mix together the milk, cream cheese, flour, and salt until smooth, set aside
  2. In a saucepan, melt butter and add garlic. Saute garlic for about a minute, then add in peeled and deveined shrimp
  3. Cook 3-5 minutes, until pink, and just barely cooked through
  4. Remove shrimp from pan, leave garlic and butter drippings in saucepan
  5. Add milk mixture to the pan, and stir for 4 minutes on medium heat. Bring to a simmer, and keep stirring for about 6 more minutes until is starts to thicken.
  6. Remove from heat, add grated cheese and Parmesan
  7. Cover, let stand for about 5 minutes.
  8. Add shrimp into sauce and let stand another 5 minutes
  9. Serve over noodles of choice, I chose fettuccine . (1 lb package is sufficient)
  10. Garnish with some dried parsley
